Y’all know I love baked oatmeal. There is just something about baking it in the oven that makes it feel extra special. It feels like a dessert yet it’s healthy(ish), gluten free, dairy and egg free! This chocolate chip and peanut butter oatmeal is going to be your new favorite recipe. It’s SO SIMPLE that ANYONE can do it! Your house is going to smell amazing and your belly will be full after just one serving of this delicious breakfast (dessert) dish.

Peanut Butter and Chocolate Chip Baked Oatmeal Recipe:

Ingredients
In 1 bowl, mix the following
1/2 cup melted Peanut Butter
1 flax egg
2-3 tbsp maple syrup
1 cup almond milk
1 1/2 tsp baking powder
2 tbsp melted vegan butter
Once mixed, then add 2 cups quick oats
Finally, fold in 1/2 cup vegan chocolate chips

Instructions
Preheat oven to 350, pour batter into a greased 9×11 casserole dish, bake for 35 minutes.
This recipe makes 8 generous servings around 300 calories each! Save the rest in your fridge! It microwaves well and is a great quick breakfast option for busy mornings. AND, a cozy dessert option for relaxing evenings!
