Vegan Carrot Cake Cupcakes

These Vegan Carrot Cake Cupcakes are so easy to make! You only need one bowl and most of the ingredients are probably already in your pantry!

Vegan Carrot Cake Cupcakes Recipe:

2 1/4 cup flour
1 tsp baking powder
1 tsp baking soda
2 tsp cinnamon
1 cup maple syrup
2 flax eggs
1/2 cup melted vegan butter
1 tsp vanilla extract
1 tbsp apple cider vinegar
1/4 cup almond milk
2 cups grated carrots

Preheat oven to 350. In one large bowl, mix together the butter, almond milk, maple syrup, apple cider vinegar, vanilla, flax eggs, cinnamon, baking soda, and baking powder. Once mixed, add in your flour and mix until batter is smooth. Fold in your carrots. Pour batter into 12 lined or greased muffin tins and bake for 25-30 minutes.

While baking, feel free to make my easy Vegan Cream Cheese Frosting!
Using a hand mixer, mix together the following:
3-4 cups of confectioners sugar
1 8 ounce package of vegan cream cheese
1 tsp vanilla

Note: Use more confectioners sugar for a thicker frosting. Use less for a runnier frosting.
