There is no better way to start the morning than with a plate of crisp, golden, and fluffy vegan blueberry waffles. These blueberry waffles are as easy to make as they are absolutely delicious! You only need one bowl and 6 simple ingredients - in 15 or 20 minutes you'll have a plate of homemade waffles that everyone will want to sink their teeth into. No one will guess these are vegan and gluten free waffles and they are sure to be a crowd pleaser!

Mix the almond or oat milk, maple syrup, vanilla extract, and baking powder together. Then, mix in the flour just until it is smooth. Don't over mix or your waffles will be dense.

Fold in the fresh or frozen blueberries. Heat your waffle iron to high heat and once it's hot - spray it with non-stick cooking spray. I like to use coconut oil spray.

Spoon about 2 or 3 tbsp of the waffle batter into the hot iron. Cook the waffles for about 2 or 3 minutes until they are crisp and golden. Repeat until all the batter is used.

Top with blueberries, vegan butter, and maple syrup. Enjoy! Tip: I used frozen blueberries in my waffle batter and topped my waffles with frozen blueberries that had been thawed. I find they are more juicy this way!
