Mix diced onion, garlic, mashed chickpeas, nutritional yeast, seasonings, cauliflower rice, flax eggs, and tomato paste together. Then, add vital wheat gluten and knead for about a minute. Shape into about 12 meatballs and bake on a baking sheet in the oven for 30 minutes.

Remove from oven and finish them off by heating a large skillet on the stove with 1 tbsp of olive oil. Cook the meatballs until browned on all sides and then add a jar of store-bought marinara sauce. Cook until the sauce is warm and enjoy!
