"Mexican" Cauliflower Rice

Begin by preparing your pico de gallo, simply mix all the ingredients together in a bowl and set aside.

Next, prepare your cauliflower rice by heating a large skillet on the stove to medium high. Spray it with olive oil spray and insert 1 package of thawed frozen cauliflower rice. Add seasonings and cook for 10 minutes, stirring frequently. While the cauliflower rice is cooking, heat the black beans in a small pot or in the microwave.

Each serving includes half of the cauliflower rice combined with 1/2 of the black beans, 1/2 of the pico de gallo mixture, 1/2 of the avocado, and add any other toppings you like!
