Rinse and drain one can of chickpeas. Then, roughly mash with a fork. Do not over mash. You want it to be textured.

In a food processor, blend together pistachios, 1 tbsp olive oil, maple syrup, garlic powder, pepper and breadcrumbs. Set aside.

Then, use the fork to mix the chickpeas and the pistachio mixture until well combined. Use your hands to roll the falafel mixture into balls, about 1 1/2 tbsp each in size. You'll have about 16 balls.

Heat a skillet to medium heat on the stop and pour in 2 tbsp avocado oil or olive oil. Once the oil is hot, insert the balls and cook them until they are golden on all sides.

While the falafel is frying, prepare your cauliflower rice on the stove. Once cooked, toss it with lemon and parsley. Be conservative with your lemon juice, you can always add more to your serving! Season with salt and pepper to taste!

Serve 1 cup of cauliflower rice with about 4 falafel for a delicious, healthy, and filling dinner!
