Preheat the oven to 400. In a large mixing bowl, mix the flax seed meal with the warm water. Let it sit for 2 minutes until a gel forms.

2

Add the melted vegan butter, vanilla, sugar, almond milk, and salt to the bowl. Mix until smooth. Then, mix in the flour until a thick batter forms. I find that 1 1/2 cups of flour is perfect in this recipe, but for even gooier blondies, try using only 1 1/4 cup of flour!

3

Transfer the batter into a 9x11 casserole dish that has been generously sprayed with nonstick spray. Option to sprinkle the top of the batter with more sugar or leave plain.

4

Bake in the oven for about 25 minutes or until the blondies are golden and crisp around the edges while soft and gooey in the center. Let them cool before slicing and serving.

There's no secret that this vegan cream cheese frosting is my favorite topping for almost any of my desserts! While the blondies are baking, use an electric hand mixer to mix the powdered sugar, softened vegan butter, and vegan cream cheese together. Allow the blondies to cool before frosting and sprinkling with colorful sprinkles.
