These fun and fluffy vegan "funfetti" pancakes are the perfect vegan pancake to serve for birthdays or any occasion! They're golden on the outside, soft on the inside, and topped with a delicious frosting! These pancakes truly are like eating a cake! This is a kid-friendly and family friendly vegan breakfast stack that everyone will love!

In one bowl, mix the sugar, baking powder, almond or oat milk, and vanilla. Then, whisk in the flour until the batter is smooth.
Heat a non stick skillet to medium heat on the stove. Spray with cooking oil or use vegan butter to coat the pan.
Once the oil or butter is hot, spoon in about 3 tbsp of batter per pancake. Then, sprinkle in a sprinkles the top of the batter. Cook until bubbles form in the pancakes and then flip. It should be golden browned.
To make your cream cheese icing, mix the melted butter, cream cheese, and powdered sugar. If the icing is too thick, you can add a splash of almond milk to thin it out so it's pourable or simply melt it in the microwave before pouring it over the pancakes.
