In a large bowl, mix melted vegan butter, maple syrup, vanilla, baking powder, baking soda, and almond or oat milk until completely combined. Then, add 2 cups of quick oats and mix. Finally, fold in chocolate chips.

Pour the batter into 6-8 lined muffin cups and bake for about 20 minutes.
