Drizzle 4 potatoes with olive oil, use a fork to poke a few holes in them, and loosely wrap them in aluminum foil. Bake them in the oven for 55-60 minutes. Then, unwrap them and broil them for 7-10 minutes until the skin is crisp.

While the potatoes are baking, prepare the guacamole by mashing the avocado, lime juice, onion, tomato, cumin, salt, and garlic powder together. Set aside. Once potatoes have broiled and have a crispy skin, carefully remove the from the oven and allow to cool for a few minutes. Then, slice them open and use a fork to mash the flesh together. Top with guacamole and salsa and enjoy!
