One of my favorite childhood treats was a sugar cookie. And, what's better than a sugar cookie? A confetti sprinkle sugar cookie of course! You only need one bowl and a hand full of ingredients to make these buttery and golden 20 minute sugar cookies. They're made without eggs, dairy, and can be made gluten free!

Preheat the oven to 425. Prepare the flax egg by mixing the flax seed meal (ground flax seeds) and the warm water in your mixing bowl. Allow this to sit for 2 minutes.

Mix in the sugar, vanilla, baking powder, almond milk, and salt. Once smooth, add 1 1/4 cup of regular or gluten free all purpose flour OR 2 cups of oat flour to the bowl and mix until a thick cookie dough forms. Fold in the sprinkles.

Line a baking sheet with parchment paper and then use a table spoon to scoop our the cookie dough. Roll the dough in your hands to make a ball and then place onto the baking sheet.

Repeat until the sheet is full with about 2 inches between each cookie. You may need to make these in a few batches. Bake for 10-11 minutes. Remove from the oven and let the cookies flatten on the sheet for about 2 minutes. Once they've flattened, transfer them, to a cooling rack to allow them to continue to cool. Enjoy! I store these in an airtight container at room temp!
