Vegan Pesto
Crispy Italian Tofu

Heat a large skillet on the stovetop to medium high, pour in 1 tbsp olive oil and 1 tbsp minced garlic. Cook for 2-3 minutes until garlic begins to sizzle.

Add tofu and sprinkle with Italian seasonings. Season to taste. Let the tofu get crispy and golden on each side, store gently but frequently. It should only take about 10 minutes.

Remove tofu from heat and set aside. If there is excess oil, place the tofu pieces on a plate with a paper towel to soak up the oil.

Prepare cauliflower rice as instructed on the packaging.

While cauliflower rice is cooking, blend together all of your pesto ingredients in a food processor.

Pour cauliflower rice in a large bowl. If there is extra water, drain it and then put it in a bowl. Then, pour the pesto on top and toss together until all the rice is evenly coated. Serve in a bowl with the tofu. I love adding tomatoes to mine!
