These vegan chocolate muffins are going to become a new favorite in your family. You only need about 5 minutes and 8 simple ingredients to whip these up. I'm guessing you already have what you need in your pantry! The result is a super moist, fluffy, and soft chocolate chip muffin that is absolutely delicious! No one will believe these are vegan and can be made gluten free and everyone will love sinking their teeth into them.

Preheat the oven to 350

Mix the almond milk, melted vegan butter, sugar, baking powder, baking soda, and vanilla together. Option to add a little cinnamon. Then, add the flour and mix until a smooth batter forms. Fold in the chocolate chips.

Spoon the batter into about 14 lined muffin wells, you may spray the liners with nonstick spray to keep them from sticking. Option to sprinkle more chocolate chips on top of the muffin batter. Bake in the oven for 20-25 minutes or until the muffins have risen and are golden on the tops.

I love enjoying these warm and spread with a little vegan butter, nut butter, or drizzled with maple syrup. They're also perfect on their own and can be stored on the counter top in an airtight container for 3-5 days.
