
Begin by mixing together your teriyaki sauce ingredients and set aside.
Heat a large skillet to medium high on the stovetop and add 1 tsp olive oil. Then, add garlic, onions, and cook for about 2 minutes. Add cashews and cook for 5 minutes, stir frequently. Then, add teriyaki sauce, mushrooms, and carrots. Cook for about 5 minutes until veggies are cooked and then remove from heat.
Fill bib lettuce with the cashew mixture, top with shredded purple carrots and chives.
