In a medium saucepan, bring water and oat milk to a boil. Add the grits and reduce the heat to a simmer. Cook until the grits become thick and creamy, stirring often - about 10 minutes. Remove from heat & mix in the vegan cheddar cheese.

Scoop out about 1/4 of the pot of grits and enjoy each serving with a pat of vegan butter, seasoned with salt and pepper, and drizzled with maple syrup.
