If you are looking for a rich, indulgent, moist, and tender cake to impress your friends and family with this holiday season, this Vegan Gingerbread Loaf is for you! It's perfectly sweetened with sugar and molasses, and spiced with delicious cinnamon, nutmeg, ginger, and cloves. Not only will your home smell holiday-ready, but when you take a bite of this cake, you'll feel as though you're experiencing a true Christmas Miracle! This is a melt-in-your-mouth good loaf that everyone will love and no one will believe is vegan!

Preheat the oven to 375
In a large mixing bowl, mix the almond milk, melted vegan butter, molasses, sugar, vanilla, baking powder, baking soda, cinnamon, ginger, nutmeg, and cloves together until combined. Add the flour and oats and milk until a batter forms.
Pour the batter into a greased 9x11 inch loaf pan. Bake for 40-45 minutes or until you can stick a toothpick down the middle and it comes out clean.
While the loaf is baking, if you're icing your loaf - use an electric hand mixer to mix your icing ingredients (your choice of vanilla icing or cream cheese icing)! Allow the loaf to cool for about 10 minutes and then spread the icing over the loaf. Enjoy!
