If you're vegan, there is no reason to miss out on pizza ! Bake this delicious vegan pesto flatbread. It's simple, delicious, and you won't miss the cheese! Feel free to use my simple flatbread recipe below OR just use a store bought flatbread!

Preheat the oven to 400.

Begin by bringing 1 cup of water with 1/2 a cup of cashews to a boil. Once boiling, reduce heat to low, cover pot with a lid, and simmer for 20 minutes.

If making my simple and easy flatbread, follow these steps. If not, skip to the next part of the recipe! While cashews are boiling, prepare your pizza dough by mixing the almond milk, salt, baking powder, and oil together in a bowl. Then, mix in flour until a dough forms. Knead the dough about 8 times and then cover in the bowl with plastic wrap and set aside for 10 minutes. After 10 minutes, lay dough on a floured surface and roll into a 12 inch thin flatbread shape. Put the crust onto a pizza stone or baking sheet and bake for 10-12 minutes until lightly browned. Then, remove from oven.

Once cashews are done boiling, drain water off of them and pour them into the food processor along with remaining pesto ingredients. Blend 2-3 minutes until all ingredients are completely combined.

Spread pesto over the pizza crust and top with tomatoes or any other toppings. Put the flatbread back into the oven and bake for another 10-15 minutes until desired crispiness.
