These healthy peanut butter chocolate chip cookies are the perfect balance of sweet and salty! They're made with a few simple ingredients, no refined sugar or flour, and are absolutely delicious! Everyone will love them and no one will guess that they're better-for-you!
½cupmelted coconut oil or vegan butterregular butter will work if not vegan
2tablespoonflax seed mealused to make flax eggs
4tablespoonwarm waterused to make flax eggs
⅓cupcoconut or cane sugar
⅓cupmaple syrup
1teaspoonvanilla
¼teaspoonsalt, plus more to taste
⅔cupPBfit All Natural Organic Peanut Butter Powder
1 ⅓cupalmond flour
⅓cupchocolate chipsregular or vegan as needed
sea salt flakes for serving

Peanut Butter Chocolate Chip Cookies
Preheat the oven to 375. Line a baking sheet with parchment paper.
In a small bowl, mix the flax seed meal and warm water together. Set aside for 2 minutes.
Mix the melted coconut oil, flax seed meal mixture, coconut sugar, maple syrup, vanilla, and ¼ teaspoon salt together. Then, add the peanut butter powder and almond flour and mix until a thick cookie dough forms. Taste a small part of the dough to see if you want to add a pinch more salt or not. Remember, you will be adding more sea salt flakes on top! Fold in the vegan chocolate chips.
Scoop 1 heaping tablespoon of cookie dough per cookie onto the baking sheet. Leave about 2 inches between each cookie. Bake in the oven for 10-11 minutes (or until they are golden around the edges). Allow them to cool for a few minutes before serving. Sprinkle while they're still warm with sea salt flakes and enjoy!
