Peanut Butter Chocolate Chip Cookie Ingredients

  • ½ cup melted coconut oil or vegan butter regular butter will work if not vegan
  • 2 tablespoon flax seed meal used to make flax eggs
  • 4 tablespoon warm water used to make flax eggs
  • cup coconut or cane sugar
  • cup maple syrup
  • 1 teaspoon vanilla
  • ¼ teaspoon salt, plus more to taste
  • cup PBfit All Natural Organic Peanut Butter Powder
  • 1 ⅓ cup almond flour
  • cup chocolate chips regular or vegan as needed
  • sea salt flakes for serving

Instructions
 

Peanut Butter Chocolate Chip Cookies

  • Preheat the oven to 375. Line a baking sheet with parchment paper.
  • In a small bowl, mix the flax seed meal and warm water together. Set aside for 2 minutes.
  • Mix the melted coconut oil, flax seed meal mixture, coconut sugar, maple syrup, vanilla, and ¼ teaspoon salt together. Then, add the peanut butter powder and almond flour and mix until a thick cookie dough forms. Taste a small part of the dough to see if you want to add a pinch more salt or not. Remember, you will be adding more sea salt flakes on top! Fold in the vegan chocolate chips.
  • Scoop 1 heaping tablespoon of cookie dough per cookie onto the baking sheet. Leave about 2 inches between each cookie. Bake in the oven for 10-11 minutes (or until they are golden around the edges). Allow them to cool for a few minutes before serving. Sprinkle while they're still warm with sea salt flakes and enjoy!
