These buttery, moist, golden, and chewy sugar-cookies aren't just for santa! Everyone in your home will love them and they can be made vegan and gluten-free friendly. You only need a handful of simple ingredients and about 20 minutes.
2tablespoonflax seed meal + 4 tablespoon hot wateror one regular egg
½cupmelted vegan butter
1cupcane sugar
1tablespoonunsweetened almond or oat milk

1 ¼cupregular or gluten free all purpose flourIf gluten-free, I recommend King Arthur Measure for Measure gluten-free flour. Please don't substitute any other flour such as almond flour, baking flour, etc.

2tablespoonalmond milk
1tablespoonsoftened vegan butter

Instructions
Vegan Christmas Sprinkle Sugar Cookies
Preheat the oven to 425. Prepare the flax eggs by mixing the flax seed meal and hot water together. Set aside for 2 minutes until a gel forms. Alternatively, you may use one regular egg in place of the 2 flax eggs.
In a mixing bowl, mix the melted vegan butter, cane sugar, 2 flax eggs, vanilla, baking powder, almond milk, and salt. Then, add the flour and mix until a thick vegan sugar cookie dough forms. Option to fold sprinkles directly into the cookie or wait until the end to sprinkle them on top with frosting.
Prepare a baking sheet with parchment paper. Use your hands to roll about a tablespoon of batter each into balls. Set each ball onto the baking sheet. Bake for 10-12 minutes until the cookies are lightly golden on the bottom and around the edges.
Option to make the vegan vanilla frosting by using an electric hand mixer to mix the powdered sugar, almond milk, melted vegan butter, and vanilla together. Spread over the cookies once they've cooled. Sprinkle the tops with Christmas sprinkles and enjoy!
