Ingredients
  

Vegan Oatmeal Blueberry Banana Pancakes

  • 2 mashed overripe bananas
  • 1 cup unsweetened almond or oat milk
  • 2 tablespoon maple syrup
  • 3 teaspoon baking powder
  • ½ teaspoon cinnamon
  • 1 teaspoon vanilla
  • 1 cup quick oats
  • ¾ cup regular or gluten free all purpose flour If gluten-free, I recommend King Arthur Measure for Measure gluten-free flour. Please don't substitute any other flour such as almond flour, baking flour, etc.
  • ½ cup blueberries

Vegan Oatmeal Blueberry Banana Pancakes

  • In a medium sized mixing bowl, mash two overripe bananas. Mix them with non dairy milk, maple syrup, and baking powder. Option to add in a teaspoon of vanilla and ½ teaspoon cinnamon. Mix well and then add the oats and flour.
  • Bring a well-greased skillet to low or medium-low heat. You can use nonstick spray, vegan butter, or oil to grease your skillet. Once the skillet is hot, spoon in 2-3 tablespoon of batter per pancake. Sprinkle blueberries on the top of each pancake.
  • Cook the pancakes until bubbles form on the tops and the oats in the pancake look semi-cooked. You can use a spatula to check the bottom of the pancake to make sure it's nice and golden before flipping.
  • Repeat until the pancakes are all cooked and golden on each side. Serve with maple syrup. Top with banana slices or more blueberries.
