Homemade Vegan Caesar Dressing

  • 1 15 oz can chickpeas
  • 2 tablespoon water
  • 1 tablespoon olive oil
  • 1 tablespoon dijon mustard
  • 1 tablespoon capers
  • 2-3 cloves garlic
  • 1 teaspoon lemon juice
  • ¼ teaspoon salt
  • ¼ teaspoon pepper

King Arthur Gluten-Free Pizza Crust

  • 1 Box King Arthur Gluten-Free Bread & Pizza Crust Mix
  • cup melted vegan butter or olive oil
  • ¾ cup warm water
  • 2 tablespoon olive oil or melted vegan butter

Seasoned & Oven-Roasted Crispy Chickpeas

  • 1 15 oz can chickpeas
  • olive oil spray
  • ¼ teaspoon dried basil
  • ¼ teaspoon dried parsley
  • ¼ teaspoon dried oregano
  • salt and pepper to taste

Homemade Vegan & Gluten-Free Croutons

  • 1 large slice of sour-dough bread, gluten free if needed
  • olive oil spray
  • ¼ teaspoon garlic powder
  • salt and pepper to taste

Instructions
 

Preparing Pizza Crust

  • You can either make your own pizza crust or use store-bought. To make the homemade vegan and gluten free pizza crust, either follow the instructions for the no-yeast vegan pizza crust, yeasted vegan pizza crust, or proceed to the next step to see how to use King Arthur's Gluten-Free Bread & Pizza Crust Baking Mix.
  • To prepare the Gluten-Free Pizza Crust using King Arthur Gluten-Free Bread & Pizza Crust Baking Mix, preheat the oven to 400.
  • Pour the flour contents of the baking into a bowl. Mix in ⅓ cup olive oil or melted vegan butter and ¾ cup warm water. Mix until a thick dough forms and then use your hands to form the dough into a round ball.
  • Place the vegan and gluten-free pizza dough onto a floured surface and roll it into a ⅓ inch thick slab. Transfer the dough onto a pizza baking sheet and bake in the oven for 12-14 minutes. Remove the crust from the oven, brush the edges with olive oil or melted vegan butter, and return to the oven. Broil for 1-2 minutes until lightly golden around the edges.

Crispy Chickpeas

  • While the pizza crust is baking, pour 1 entire can of chickpeas onto a baking sheet lined with parchment paper. Spray generously with olive oil spray and then season with the dried herbs, salt, and pepper. Bake for 15 minutes, remove from the oven, toss, and return to the oven for another 10 minutes.

Homemade Vegan & Gluten Free Croutons

  • While the pizza crust and chickpeas are baking, slice the sourdough bread into 1 inch pieces. Spread then onto a parchment lined baking sheet and spray the tops generously with olive oil spray. Season with garlic powder, salt, and pepper. Bake in the oven for 7-10 minutes or until crispy.

Vegan Caesar Salad Dressing

  • In a food processor, add 1 15 ounce can of chickpeas (rinsed and drained), water, olive oil, dijon mustard, capers, garlic, lemon, salt, and pepper. Process until smooth, adding an additional tablespoon or two of water if the dressing is too thick. Set aside

Assembling & Serving

  • Once the crust is done baking, spread the vegan caesar dressing over the crust. Sprinkle the top with romaine lettuce, the crispy chickpeas, store-bought or homemade croutons, and vegan parmesan cheese. Slice, serve, and enjoy!
