Ingredients

Vegan Chocolate Chip Muffins

  • 1 ¼ cup unsweetened almond or oat milk
  • ¼ cup melted vegan butter
  • 1 cup sugar
  • 1 ½ teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla
  • ½ teaspoon cinnamon - optional
  • 2 cup regular or gluten free all purpose flour If gluten-free, I recommend King Arthur Measure for Measure gluten-free flour. Please don't substitute any other flour such as almond flour, baking flour, etc.
  • ½ cup vegan chocolate chips

Instructions

Vegan Chocolate Chip Muffins

  • Preheat the oven to 350
  • Mix the almond milk, melted vegan butter, sugar, baking powder, baking soda, and vanilla together. Option to add a little cinnamon. Then, add the flour and mix until a smooth batter forms. Fold in the chocolate chips.
  • Spoon the batter into about 14 lined muffin wells, you may spray the liners with nonstick spray to keep them from sticking. Option to sprinkle more chocolate chips on top of the muffin batter. Bake in the oven for 20-25 minutes or until the muffins have risen and are golden on the tops.
  • I love enjoying these warm and spread with a little vegan butter, nut butter, or drizzled with maple syrup. They're also perfect on their own and can be stored on the counter top in an airtight container for 3-5 days.
