Ingredients

Strawberry Crumble

  • 4 cup sliced fresh or frozen strawberries
  • 1 ½ cup quick oats
  • cup melted vegan butter or coconut oil
  • cup sugar

Instructions

Strawberry Crumble

  • Preheat oven to 375 degrees F.
  • In a small bowl, mix the quick oats, melted butter, and sugar until a crumble forms. If using coconut sugar, substitute 1:1 ratio. If using monk fruit sweetener with zero calories, I recommend starting with 3 or 4 Tbsp, as monk fruit is more sweet than sugar.
  • Pour the strawberries into a 9x11-inch casserole dish and top them with the oatmeal crumble. Bake in the oven for 35-40 minutes and until golden.

Notes

Store leftovers covered or in an airtight container, in the refrigerator, for up to 2 to 3 days. Reheat individual servings, covered, in the microwave for 30-45 seconds or until it is warmed to your preference.
