30 Minute Frosted Vegan Strawberry Donuts

Nothing says springtime like strawberry frosted donuts! These delicious sweet treats are a vegan dessert that everyone will love! They're easy to bake, cakey, moist, and super tasty! Bake a batch of these family friendly vegan & gluten free donuts in just 30 minutes! Top them with my easy homemade strawberry frosting and these will be a hit!

Ingredients
  

30 Minute Frosted Vegan Strawberry Donuts

  • 1 ¼ cup unsweetened almond or oat milk
  • ¼ cup melted vegan butter
  • 1 cup sugar
  • 1 ½ teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla
  • 2 cup regular or gluten free all purpose flour If gluten-free, I recommend King Arthur Measure for Measure gluten-free flour. Please don't substitute any other flour such as almond flour, baking flour, etc.

Strawberry Frosting

  • ¼ cup softened vegan butter
  • 1 cup puréed strawberries
  • 12 oz powdered sugar
  • 1 teaspoon lemon juice

Instructions
 

30 Minute Frosted Vegan Strawberry Donuts

  • Preheat the oven to 350
  • Mix the almond milk, melted vegan butter, sugar or purecane, baking powder, baking soda, an vanilla together. Then, mix in the flour until the batter is smooth. Option to fold in diced fresh or frozen strawberries into the batter. Spoon the batter into 14-16 greased silicon donut molds and bake for 25 minutes.
  • While the donuts are baking, add about 2 cups of strawberries into a small saucepan and heat them over medium/low heat until they're completely broken down (about 5 minutes). Stir frequently. Alternatively, you can microwave them for about 45 seconds.
  • Once the strawberries have broken down, use a handheld immersion blender to blend the berries. Measure out 1 cup of the strawberry purée and then, use a whisk or electric mixer to mix in the softened butter, lemon juice, and 2 cups of powdered sugar (adding more as needed for a thicker frosting). Set aside until the donuts are ready to frost.
  • Allow the donuts to cool and then spoon the frosting over top. You will have leftover frosting so feel free to freeze for 30 days. Enjoy!
