  • 1 cup unsweetened almond or oat milk
  • ¾ cup maple syrup
  • ¼ cup melted vegan butter
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ginger
  • 1 teaspoon cinnamon
  • ½ teaspoon nutmeg
  • ¼ teaspoon cloves
  • 1 ¾ cup oat flour
  • 1 cup quick oats

How To Make Gingerbread Muffins

  • Preheat oven to 350.
  • In a medium bowl, mix oat or almond milk, maple syrup, melted vegan butter, and spices. Then, add in baking soda and baking powder, mix. Finally, add flour and oats and mix just until combined.
  • Pour batter into 12 lined muffin tins and bake for 25-30 minutes.
