These Halloween Cupcakes are moist, fluffy, and perfectly chocolatey! This is an easy and fun recipe for the whole family - everyone will love them and no one will guess they're both vegan and gluten-free friendly!
1 ½cupunsweetened almond or oat milkor regular milk
1cuporganic cane sugar
½cupmelted vegan butteror regular butter
2teaspoonbaking powder
1teaspoonbaking soda
1teaspoonvanilla
½cupcocoa powder
2cupregular or gluten free all purpose flourIf gluten-free, I recommend King Arthur Measure for Measure. Please don't substitute any other flour such as almond flour, baking flour, etc.
Vanilla Frosting
1 ½cuppowdered sugar
2tablespoonunsweetened almond or oat milk
1teaspoonvanilla extract
Halloween Sprinkles
2tablespoonvegan halloween sprinkles
Instructions
Halloween Vegan Chocolate Cupcakes
Preheat the oven to 350
In a medium mixing bowl, add the oat or almond milk, sugar, melted vegan butter, baking powder, baking soda, and vanilla. Then, add the cocoa powder and mix until completely combined. Finally, mix in the all purpose flour and be careful not to over-mix.
Pour the batter into 14-16 lined cupcake molds. Bake for about 25 minutes or until they are completely risen.
While the cupcakes are baking make the frosting by, using an electric hand mixer to mix the powdered sugar, almond milk, and vanilla. Allow the cupcakes to cool and then frost them. Option to top with sprinkles.
