These cheddar bay biscuits are savory, cheesy, and so delicious! They're golden on the outside, fluffy on the inside, and will remind you of a red lobster biscuit! These vegan drop biscuits are also super easy and family friendly!
½cupmelted regular or vegan butterplus more for brushing on top before serving
¾cupunsweetened almond milk, oat milk, or regular milk
1 ½teaspoonbaking powder
½teaspoonsalt
2teaspoongarlic powder
2cupregular all purpose flour or gluten free all purpose flourIf gluten-free, I recommend King Arthur Measure for Measure gluten-free flour. Please don't substitute any other flour such as almond flour, baking flour, etc.
1cupregular or vegan cheddar cheese shreds
1tablespoonchopped parsley

Preheat oven to 400
Mix melted butter, almond milk, seasonings, and baking powder. Then, mix in your flour just until combined. If using gluten-free flour and the dough seems crumbly, add another 1 tablespoon of melted vegan butter and 1 tablespoon of almond milk and work it into the dough. This is ok! don't over-mix the dough.
Fold in cheddar cheese and parsley.
Use a tablespoon to drop the biscuits onto a greased baking sheet and bake for 15 minutes until the bottoms of the biscuits are golden and the tops are fluffy. You can broil them for 1 minute at the end to give them more golden brown color. Serve warm, with melted butter brushed on top immediately after removing from the oven.
