Vegan Blackberry Baked Oatmeal with Cream Cheese Frosting

  • 1 cup unsweetened oat or almond milk
  • ½ cup maple syrup
  • ¼ cup melted vegan buttr
  • 1 teaspoon vanilla
  • 1 teaspoon cinnamon
  • 1 teaspoon baking powder
  • 2 cup quick oats
  • 1 ½ cup fresh or frozen black berries

Optional Cream Cheese Icing

  • 4 oz vegan cream cheese icing
  • 4 tablespoon softened vegan butter
  • 1 ½ cup powdered sugar

Vegan Blackberry Baked Oatmeal with Cream Cheese Frosting

  • Preheat your oven to 375
  • In a large mixing bowl, mix the almond or oat milk, maple syrup, melted vegan butter, vanilla, cinnamon, and baking powder. Then, add the oats and mix. Finally, fold in the blackberries and pour the mixture into a 9x11 casserole dish. Bake for 45 minutes until your kitchen smells amazing and the oats are golden and berries are bubbling.
  • If you're in the mood for some extra sweetness, while the oatmeal is baking, use an electric hand mixer to mix the icing ingredients together. Drizzle the icing over top of the oats after they've cooled! But, I promise you, even without the frosting, these oats are AMAZING!
