Vegan Blackberry Baked Oatmeal with Cream Cheese Frosting
1cupunsweetened oat or almond milk
½cupmaple syrup
¼cupmelted vegan buttr
1teaspoonvanilla
1teaspooncinnamon
1teaspoonbaking powder
2cupquick oats
1 ½cupfresh or frozen black berries
Optional Cream Cheese Icing
4ozvegan cream cheese icing
4tablespoonsoftened vegan butter
1 ½cuppowdered sugar

Preheat your oven to 375
In a large mixing bowl, mix the almond or oat milk, maple syrup, melted vegan butter, vanilla, cinnamon, and baking powder. Then, add the oats and mix. Finally, fold in the blackberries and pour the mixture into a 9x11 casserole dish. Bake for 45 minutes until your kitchen smells amazing and the oats are golden and berries are bubbling.
If you're in the mood for some extra sweetness, while the oatmeal is baking, use an electric hand mixer to mix the icing ingredients together. Drizzle the icing over top of the oats after they've cooled! But, I promise you, even without the frosting, these oats are AMAZING!
