Everyone's favorite childhood halloween cookie! You only need one bowl and a hand full of ingredients to make these buttery and golden Halloween vegan monster cookies. They're made without eggs, dairy, and can be made gluten free!

  • ¼ cup regular or vegan rainbow sprinkles
  • ¼ cup Halloween Sprinkles
  • ¼ cup candied peanuts
  • ¼ cup chocolate chips

How To Make Vegan Monster Cookies

  • Preheat the oven to 425. Prepare the flax egg by mixing the flax seed meal (ground flax seeds) and the warm water in your mixing bowl. Allow this to sit for 2 minutes.
  • Mix in the sugar, vanilla, baking powder, almond milk, melted vegan butter, and salt. Once smooth, add 1 ¼ cup of regular or gluten free all purpose flour OR 2 cups of oat flour to the bowl and mix until a thick cookie dough forms. Fold in the sprinkles, candied peanuts, and chocolate chips.
  • Line a baking sheet with parchment paper and then use a table spoon to scoop our the cookie dough. Roll the dough in your hands to make a ball and then place onto the baking sheet.
  • Repeat until the sheet is full with about 2 inches between each cookie. You may need to make these in a few batches. Bake for 10-11 minutes. Remove from the oven and let the cookies flatten on the sheet for about 2 minutes. Once they've flattened, transfer them, to a cooling rack to allow them to continue to cool. Enjoy! I store these in an airtight container at room temp!

Notes

Q: What can I use in place of the vegan butter in this recipe?
A: I'd recommend using any vegan or regular butter (if you're not vegan) in this recipe. You may also use melted coconut oil for a healthier alternative.
Q: Do I have to make this recipe with gluten free flour?
A: Nope! You may use regular all-purpose flour if you are not gluten-free!
Q: Do I have to use the flax seed meal mixture?
A: If you are not vegan, you may use 1 regular egg in place of the flax seed meal mixed with warm water.
