Strawberry Baked Oats

  • 1 cup unsweetened almond or oat milk
  • ½ cup freshly chopped strawberries plus more for topping
  • ¼ cup regular cane sugar or 2 tablespoon of purecane sugar-free substitute
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla
  • 1 teaspoon vegan red food coloring optional
  • 1 ½ cup regular or gluten-free old fashioned oats

Strawberry Baked Oats

  • Preheat the oven to 350. Grease 4 small ramekins with non stick baking spray.
  • Add the almond milk, strawberries, sugar, baking powder, vanilla, food coloring, and oats together. Blend for 10-15 seconds or until smooth.
  • Pour the oatmeal batter into the ramekins and bake in the oven for about 30 minutes or until the oats have risen and are lightly golden around the edges.
  • While the strawberry baked oats are baking, use an electric hand mixer to mix the vegan cream cheese, butter, and powdered sugar to make the vegan cream cheese frosting.
  • Enjoy warm topped with fresh berries. Enjoy!
