These chocolate baked oats are vegan, gluten-free, healthy, and you will feel like you're eating a brownie for breakfast! You only need a handful of ingredients and a few minutes to make these mini blender baked oats. They're the perfect make-ahead breakfast or snack to reheat on a busy day. 1 ½cupold fashioned rolled oats or quick cooking oats
4tablespoonsugar or 2 tablespoon purecane sugar substitute
3tablespoonmelted vegan butter or melted coconut oil
pinch of sea salt
2tablespoonground flax seed
1teaspoonvanilla extract
1 ¼cupplain and unsweetened almond or oat milk
1overripe banana
3tablespooncocoa powder
1 ½teaspoonbaking powder
4tablespoonvegan chocolate chips

Preheat the oven to 375. Spray 4 ramekins with non stick cooking spray.
Add the oats, sugar or purecane, ground flax seed, vanilla, almond milk, banana, cocoa powder, and baking powder to the blender. Blend for 15-30 seconds or until the mixture is smooth. Pour the batter into 4 ceramic ramekins and top them with vegan chocolate chips (about 1 tablespoon each).
Bake in the oven for 25-30 minutes or until they have completely risen. Carefully remove them from the oven and let them cool for a few minutes before enjoying warm. I like to drizzle them with peanut butter before serving.
