These cornbread waffles are golden and crisp on the outside, soft and fluffy on the inside, and you only need 3 ingredients. They're vegan, gluten free, you only need 15 minutes and one bowl - and everyone will love them!

Ingredients
  

3-Ingredient Cornbread Waffles

  • 1 ¼ cup cornmeal
  • 1 ¼ cup canned coconut milk
  • 1 ½ teaspoon baking powder

Optional Cornbread Waffle Ingredients

  • 1 tablespoon maple syrup
  • 1 tablespoon melted vegan butter

Instructions
 

3-Ingredient Cornbread Waffles

  • In a large mixing bowl, mix the canned coconut milk and baking powder. Stir in the Arrowhead Mills cornmeal and mix until a smooth batter forms. Option to add maple syrup and vegan butter to the batter.
  • Spoon the batter into a hot waffle iron that has been sprayed with coconut oil spray. Cook each waffle until golden and crisp (about 2-3 minutes per waffle)
