This banana bread is moist, soft, and so fluffy. Drizzled with maple butter, topped with caramelized banana slices, and made with a handful of simple ingredients! We used Not Milk non-dairy plant-based milk to make this rich and decadent homestyle banana bread. Everyone will love this family-friendly vegan and gluten free banana bread recipe.

Ingredients
  

Vegan Banana Bread

  • 2 overripe mashed bananas
  • 1 cup unsweetened oat or almond milk I used Not Milk
  • ½ cup melted vegan butter
  • ½ cup cane sugar
  • 1 ½ teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla extract
  • ½ teaspoon cinnamon
  • pinch of salt - about ¼ tsp
  • 2 cup regular or gluten free all purpose flouor If gluten-free, I recommend King Arthur Measure for Measure gluten-free flour. Please don't substitute any other flour such as almond flour, baking flour, etc.

Vegan Maple Butter Topping

  • 2 tablespoon melted vegan butter
  • 2 tablespoon maple syrup

  • 1 tablespoon vegan butter
  • 2 tablespoon maple syrup
  • 2 ripe bananas, cut into slices

How to Make Maple Butter Banana Bread with Caramelized Bananas

  • Preheat the oven to 375. Grease a 9x11 inch casserole dish with nonstick spray.
  • Using a fork two overripe bananas in a bowl. Then, use the fork to mix the bananas with the Not Milk, melted vegan butter, sugar, baking powder, baking soda, vanilla, cinnamon, and salt together. Once mixed, add the flour and mix until a batter is formed.
  • Transfer the batter into the greased casserole dish and bake for 35-40 minutes. If baking in a loaf pan, you may need to bake for another 10-15 minutes. Check the center with a toothpick for doneness.
  • While the banana bread is baking, make the vegan maple butter by adding vegan butter and maple syrup into a microwave safe bowl and heating together for about 30 seconds. Set aside
  • Just before serving, prepare the caramelized bananas by bringing a skillet with one tablespoon of vegan butter to medium heat. Once the butter has melted and is sizzling, add the maple syrup. Immediately fill the pan with banana slices and cook on each side (for about 2-3 minutes) until they are crisp and caramelized.
  • Once the banana bread is done baking, serve it warm and fresh. Drizzle the entire thing with the maple butter and top with the freshly caramelized banana slices. Option to drizzle more maple syrup on top. Enjoy!
