Begin by slicing the peeled banana into ¼ inch thick slices.
Bring a skillet to medium heat and add the vegan butter. Once the butter begins to sizzle, add the maple syrup. Spread the butter and maple syrup evenly around the pan and then place the banana slices in. Cook for about 5 minutes or until the bananas lift easily off of the pan and are golden on the bottom. Cook for another 5 minutes until golden brown on each side. Remove from the heat.
Toast your bread and spread each slice with about a tablespoon of peanut butter. Top with ¼ of the caramelized bananas and enjoy alone or drizzled with maple syrup.
