¾cupregular or gluten free all purpose flourIf gluten-free, I recommend King Arthur Measure for Measure gluten-free flour. Please don't substitute any other flour such as almond flour, baking flour, etc.

Vegan Oatmeal Blueberry Banana Pancakes
In a medium sized mixing bowl, mash two overripe bananas. Mix them with non dairy milk, maple syrup, and baking powder. Option to add in a teaspoon of vanilla and ½ teaspoon cinnamon. Mix well and then add the oats and flour.
Bring a well-greased skillet to low or medium-low heat. You can use nonstick spray, vegan butter, or oil to grease your skillet. Once the skillet is hot, spoon in 2-3 tablespoon of batter per pancake. Sprinkle blueberries on the top of each pancake.
Cook the pancakes until bubbles form on the tops and the oats in the pancake look semi-cooked. You can use a spatula to check the bottom of the pancake to make sure it's nice and golden before flipping.
Repeat until the pancakes are all cooked and golden on each side. Serve with maple syrup. Top with banana slices or more blueberries.
