These vegan banana chocolate chip banana cookie bars are delicious! They're ooey, gooey, and super chewy! They taste like a cross between banana bread and a chocolate chip cookie. This is an easy one-bowl recipe that comes together in just 30 minutes. Everyone will love these, your kitchen will smell like chocolate chip cookie and banana bread heaven, and no one will believe they're made with better-for-you ingredients!

Ingredients
  

Vegan Chocolate Chip Banana Oatmeal Bars

  • 1 ½ overripe mashed banana
  • ½ cup melted vegan butter or coconut oil
  • ¾ cup brown sugar or ⅓ purecane brown sugar substitute
  • 2 tablespoon unsweetened almond or oat milk
  • 1 ½ teaspoon baking powder
  • 1 teaspoon vanilla
  • ½ teaspoon cinnamon
  • ¼ teaspoon salt
  • 1 cup regular or gluten free all purpose flour If gluten-free, I recommend King Arthur Measure for Measure gluten-free flour. Please don't substitute any other flour such as almond flour, baking flour, etc.
  • 1 cup quick oats
  • ½ cup vegan chocolate chips

Instructions
 

Vegan Chocolate Chip Banana Oatmeal Bars

  • Preheat the oven to 400
  • Mix the mashed banana, melted vegan butter, brown sugar, almond milk, baking powder, vanilla, cinnamon, and salt together. Add the flour and quick oats and mix until a thick batter forms. Fold in the chocolate chips.
  • Transfer the batter into a greased casserole dish and bake for about 25 minutes or until golden brown on the top. Let the bars cool before slicing into 16 pieces. Option to top with sliced bananas. These store well in an airtight container or resealable plastic bag on the counter top.
