Ingredients

Blueberry Waffle Ingredients

  • 1 cup unsweetened almond or oat milk
  • 4 tablespoon maple syrup
  • 1 teaspoon vanilla
  • 2 teaspoon baking powder
  • 1 ¼ cup regular or gluten free all purpose flour If gluten-free, I recommend King Arthur Measure for Measure gluten-free flour. Please don't substitute any other flour such as almond flour, baking flour, etc.
  • 1 cup fresh or frozen blueberries

Blueberry Waffle Instructions

  • Mix the almond or oat milk, maple syrup, vanilla extract, and baking powder together. Then, mix in the flour just until it is smooth. Don't over mix or your waffles will be dense.
  • Fold in the fresh or frozen blueberries. Heat your waffle iron to high heat and once it's hot, spray it with non-stick cooking spray. I like to use coconut oil spray.
  • Spoon about 2 to 3 tablespoon of the waffle batter into the hot iron. Cook the waffles for about 2 to 3 minutes until they are crisp and golden. Repeat until all the batter is used.
  • Top with blueberries, vegan butter, and maple syrup. Enjoy! Tip: I used frozen blueberries in my waffle batter and topped my waffles with frozen blueberries that had been thawed. I find they are more juicy this way!

Notes

These will keep well in the fridge for up to 5 days or in the freezer for up to 3 months. To store in the freezer, place into freezer bags individually. Alternatively, place them in a single layer on a lined baking sheet and freeze until solid (about 1-2 hours) and then store stacks of waffles in freezer bags.
