These easy vegan and gluten free cinnamon sugar cupcakes are as simple to make as they are delicious! They are fluffy, perfectly moist, soft, vanilla flavored, and tossed in cinnamon sugar! Everyone will love them and no one will guess they are vegan and gluten free (optional).
2cupregular or gluten free all purpose flourIf gluten-free, I recommend King Arthur Measure for Measure gluten-free flour. Please don't substitute any other flour such as almond flour, baking flour, etc.
optional coconut oil spray or non-stick spray

4tablespooncane sugar
½teaspooncinnamon
Instructions
Vegan Cinnamon Sugar Cupcakes
Preheat the oven to 350
Mix the almond milk, sugar or purecane, melted vegan butter, baking powder, baking soda, and vanilla together. Then, mix in the flour until smooth - be careful not to over mix.
Spoon the batter into 16 lined muffin cups and bake in the oven for about 25 minutes until the cupcakes are lightly golden on top. Option to not line your muffin cups and instead spray them with non stick spray. Pouring the batter directly into the muffin mold. This will allow you to toss the entire cupcake into the cinnamon sugar mixture and not just the tops.
While the cupcakes are baking, mix the sugar and cinnamon together to make the cinnamon sugar topping.
Once the cupcakes are done baking, dip the tops of each cupcake into the cinnamon sugar mixture. Or, if you baked your cupcakes without liners, toss the entire cupcake into the cinnamon sugar so the whole thing is coated. If your cinnamon sugar isn't sticking - you can lightly spray the cupcakes with a little coconut oil spray before tossing in the sugar. Enjoy!
