My favorite muffin as a kid were strawberry muffins! This vegan and gluten free muffin recipe is as easy to make as it is delicious! These buttery, moist, and fluffy strawberry muffins are perfect. You only need one bowl, 10 simple ingredients, and 5 minutes to prepare these vegan strawberry muffins. These vegan strawberry muffins are sweetened with maple syrup and filled with juicy strawberries. The result is a vegan, gluten free (optional), low calorie and reduced sugar muffin that is too good for words! Everyone will love these vegan muffins and no one will guess they are actually better-for-you!

Strawberry Banana Muffin Ingredients

  • 1 cup unsweetened almond or oat milk
  • 1 mashed ripe banana
  • cup melted vegan butter or coconut milk
  • ¼ cup maple syrup
  • 4 teaspoon pure powdered stevia or ⅓ to ½ cup of cane sugar
  • 1 teaspoon vanilla
  • 2 teaspoon baking powder
  • ½ teaspoon baking soda
  • 1 ½ cup regular or gluten free all purpose flour If gluten-free, I recommend King Arthur Measure for Measure gluten-free flour. Please don't substitute any other flour such as almond flour, baking flour, etc.
  • 1 cup fresh or frozen diced strawberries

How To Make Strawberry Banana Muffins

  • Preheat oven to 375
  • In a large bowl, mix together banana, almond milk, vanilla, maple syrup, butter, stevia/sugar, baking soda, and baking powder.
  • Mix in flour until just combined. Don't over mix! Fold in the strawberries gently. Pour the batter into 12 lined muffin cups. I like to spray the liners with baking spray to make sure they don't stick!
  • Bake for about 25-30 minutes until golden!
