This Healthy Vegan Apple Cinnamon Crumble is absolutely divine! Juicy honey crisp apples are tossed in monk-fruit sweetener and cinnamon and topped with delicious, buttery, and crumbly streusel. This is a healthy vegan dessert that provides all the comforting indulgent flavors of an apple cobbler with a fraction of the calories and sugar!

Ingredients
  

For the Apples

  • 4 medium apples, sliced
  • 1 teaspoon cinnamon
  • ¼ cup monkfruit sweetener or sugar

For The Crumble Topping

  • 1 cup quick oats
  • ¼ cup melted vegan butter or coconut oil
  • ¼ cup regular or gluten free all purpose flour If gluten-free, I recommend King Arthur Measure for Measure gluten-free flour. Please don't substitute any other flour such as almond flour, baking flour, etc.
  • ¼ cup monk fruit sweetener or sugar
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla

Instructions
 

  • Preheat oven to 400
  • Begin by dicing the apples and then tossing them in a bowl with the cinnamon and monk fruit sweetener or sugar. Pour the apples into a greased 9x11 baking dish and set aside.
  • In a separate bowl, mix the oats, melted vegan butter, sugar or monk fruit sweetener, cinnamon, and flour together until a crumble forms. Option to add vanilla.
  • Pour the crumble evenly over the apples. Bake in the oven for 25 minutes or until the crumble is golden brown. Enjoy warm!
