Preheat the oven to 375
Prepare the flax seed meal mixture by mixing together the hot water and flax seed meal together. Set aside until a thick paste forms.
Mix the flax seed meal mixture with the melted vegan butter, almond or oat milk, sugar, baking powder, vanilla, cinnamon, and salt. Then, add the almond flour and mix until a thick cookie dough forms.
Scoop one heaping tablespoon of cookie dough out and lay it onto a baking sheet lined with parchment paper. Allow about 2 inches between the cookies. Bake in the oven for 15 minutes or until the cookies are lightly golden and lift easily off of the baking sheet.
