Guacamole Loaded Baked Potato

Chunky guacamole is stuffed into a fluffy baked potato! This is a fun and unique twist on a vegan baked potato that is flavorful, filling, and super delicious! Enjoy this vegan baked potato recipe for a healthy vegan lunch or dinner!

Ingredients
  

  • 4 medium russet potatoes
  • 2 tablespoon olive oil
  • 2 avocados, mashed
  • ½ lime, juiced
  • ¼ cup diced onion
  • ¼ cup diced tomatoes
  • ½ teaspoon cumin
  • 1 teaspoon garlic powder
  • ½ teaspoon salt
  • ½ cup diced bell peppers
  • salsa or pico de gallo

Instructions
 

  • Preheat oven to 425
  • Drizzle 4 potatoes with olive oil, use a fork to poke a few holes in them, and loosely wrap them in aluminum foil. Bake them in the oven for 55-60 minutes. Then, unwrap them and broil them for 7-10 minutes until the skin is crisp.
  • While the potatoes are baking, prepare the guacamole by mashing the avocado, lime juice, onion, tomato, cumin, salt, and garlic powder together. Set aside. Once potatoes have broiled and have a crispy skin, carefully remove the from the oven and allow to cool for a few minutes. Then, slice them open and use a fork to mash the flesh together. Top with guacamole and salsa and enjoy!
