Ingredients
  

5 Ingredient Oat Flour Vegan Banana Waffles

  • 1 mashed overripe banana
  • 1 cup almond or oat milk
  • 2 teaspoon baking powder
  • 1 tablespoon melted vegan butter, coconut oil, or avocado oil
  • 1 cup oat flour

Optional Ingredients

  • 1 teaspoon vanilla
  • 1 tablespoon maple syrup
  • ¼ teaspoon cinnamon

5 Ingredient Oat Flour Vegan Banana Waffles

  • Begin by heating your griddle or waffle maker to high heat.
  • In one bowl, mix the banana, non dairy milk, melted vegan butter, baking powder, and optional vanilla, maple syrup, and cinnamon to the batter. Then, add the oat flour and mix. Not all oat flours are made the same, if your batter is watery, add 2-3 tablespoon more oat flour to thicken it. It should resemble pancake batter.
  • Once the iron is hot, option to spray it with coconut oil spray, butter, or olive oil spray. Fill the waffle iron mold with batter (about 3-4 tablespoon each) and cook about 2 minutes or until the waffles are golden. This recipe makes about 12 waffles!
  • Helpful Tip: Be sure that your waffles are completely cooked before opening your iron. If you find the waffles are falling apart, they may not have cooked through completely. My waffle iron separates as the waffles rise which indicates these are done.

Notes

  • To store: Cool completely, then place waffles in an airtight reusable bag and keep them in the refrigerator for up to 3-4 days, or in the freezer for up to 3 months.
  • To reheat: The best way to reheat homemade waffles is to put them in the toaster! This allows them to keep their crispy edges and fluffy insides instead of getting mushy from the microwave. You can also put them in a 200 degree F oven and toast for 5-10 minutes.
