Ingredients
  

Vegan Oatmeal Banana Muffins

  • 3 mashed overripe bananas
  • 1 cup unsweetened oat or almond milk
  • ¼ cup melted vegan butter
  • ¾ cup maple syrup or sugar
  • 1 teaspoon cinnamon
  • 1 teaspoon baking soda
  • 2 teaspoon baking powder
  • 1 teaspoon vanilla
  • 1 cup quick oats
  • 1 ½ cup regular or gluten free all purpose flour, oat flour works also If gluten-free, I recommend King Arthur Measure for Measure gluten-free flour. Please don't substitute any other flour such as almond flour, baking flour, etc.

Vegan Oatmeal Banana Muffins

  • Preheat oven to 350
  • In a large mixing bowl, smash the bananas with a fork or potato mixer. In the same bowl, mix the bananas, almond or oat milk, vegan butter, maple syrup, cinnamon, baking soda, baking powder, and vanilla together.
  • Then, mix in the oats and flour until a batter forms. Be careful not to over mix!
  • Pour the batter into 16 lined muffin cups and bake for about 25 minutes.

Notes

To store, leave in an airtight container at room temperature for up to 4 days!
