Preheat oven to 375. In a small bowl, mix the flax seed meal and warm water together. Let it sit for 2 minutes until a gel forms.
Mix the applesauce, almond milk, maple syrup, melted vegan butter, flax seed meal mixture, vanilla, baking powder, and cinnamon together. Stir in the oats. Pour the mixture into a greased 9x11 casserole dish and top with apple slices.
Bake for 30-35 minutes until the oats are golden on top. While the oats are baking, mix together the powdered sugar, almond milk, and vanilla to make a simple icing to drizzle over the oats! You can also add a little butter to the frosting too to make it "butter cream style"!
