Ingredients
  

Vegan Apple Cinnamon Baked Oatmeal

  • 1 cup unsweetened applesauce
  • ½ cup almond milk
  • ½ cup maple syrup
  • ¼ cup melted vegan butter or coconut oil
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla
  • 1 teaspoon cinnamon
  • 2 tablespoon flax seed meal
  • 4 tablespoon warm water
  • 2 cup quick oats
  • apple slices for topping

Vanilla Icing

  • 1 tablespoon almond milk
  • ¾ cup powdered sugar
  • 1 teaspoon vanilla
  • ½ tablespoon softened vegan butter

Instructions
 

Vegan Apple Cinnamon Baked Oatmeal

  • Preheat oven to 375. In a small bowl, mix the flax seed meal and warm water together. Let it sit for 2 minutes until a gel forms.
  • Mix the applesauce, almond milk, maple syrup, melted vegan butter, flax seed meal mixture, vanilla, baking powder, and cinnamon together. Stir in the oats. Pour the mixture into a greased 9x11 casserole dish and top with apple slices.
  • Bake for 30-35 minutes until the oats are golden on top. While the oats are baking, mix together the powdered sugar, almond milk, and vanilla to make a simple icing to drizzle over the oats! You can also add a little butter to the frosting too to make it "butter cream style"!
  • No frosting? No problem! This recipe also tastes delicious with a little nut butter or maple syrup drizzled on top! Allow the oats to cool for a few minutes before drizzling the frosting over the top.
