  • 1 cup almond or oat milk
  • 2 tablespoon melted vegan butter
  • ½ cup maple syrup
  • 1 teaspoon vanilla
  • 1 ½ teaspoon baking powder
  • 1 teaspoon cinnamon
  • ½ cup unsweetened applesauce
  • 2 cup quick oats
  • 3 tablespoon oat flour
  • ½ cup diced honey crisp apples

Vegan Apple Cinnamon Baked Oatmeal Muffins

  • Preheat oven to 375
  • Mix almond or oat milk, apple sauce, maple syrup, vanilla, butter, baking powder, and cinnamon together in a bowl.
  • Then, add quick oats and the flour. Fold in your sliced apples and pour the batter into 8-9 lined muffin cups. Option to spray your muffin liners with a little nonstick spray to keep them from sticking.
  • Bake for 30-35 minutes or until golden.
