Chocolate Banana Baked Oatmeal with Peanut Butter

  • 2 mashed overripe bananas
  • 1 cup almond or oat milk
  • ¼ cup maple syrup
  • 3 tablespoon melted vegan butter
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • 1 ½ cup quick oats
  • ¼ cup cocoa powder
  • ¼ cup vegan chocolate chips
  • 2 tablespoon melted peanut butter

Instructions
 

Chocolate Banana Baked Oatmeal with Peanut Butter

  • Preheat oven to 375
  • In a large mixing bowl, use a fork to mash 2 overripe bananas. Add almond or oat milk, melted vegan butter, maple syrup, and vanilla.
  • Mix in cocoa powder, then mix in oats. Finally, fold in chocolate chips. Pour the batter into a greased 9x11 casserole dish and bake for about about 25-30 minutes until the oats are fluffy.
  • If using, melt the peanut butter in the microwave for about 30 seconds and drizzle it over the top of the baked oats.
