If you love the Starbucks Cranberry Bliss Bars, now you can make a healthier version right in the comfort of your own home. They're vegan-friendly, can be made gluten-free, and with reduced sugar thanks to our sponsor, purecane! This recipe is so easy and everyone will love them!
2cupsregular or gluten-free all purpose flourIf gluten-free, I recommend King Arthur Measure for Measure gf flour. Please don't substitute any other flour such as almond flour, baking flour, etc.
Preheat the oven to 350. Spray a large 12 inch round baking dish (or 9x11 inch baking dish) with non-stick baking spray.
In a large mixing bowl, mix the melted vegan butter, almond milk, brown sugar, organic cane sugar, lemon or orange extract, vanilla, salt, baking powder, and cinnamon together. Then, add the flour and mix until a thick batter forms. Fold in the cranberries and white chocolate chips.
Transfer the batter into the baking dish and bake for 35-40 minutes until golden. While the bars bake, make the cream cheese frosting. Mix the powdered sugar, vegan cream cheese, and softened vegan butter together. Set aside until ready to serve.
Once the bars are done baking, spread them with the vegan cream cheese frosting. Sprinkle more cranberries and white chocolate chips on top and then slice the bars into 12 servings. Enjoy cool or warm!
