Creamy Garlic Pasta Ingredients

  • 12 oz regular or gluten-free pasta noodles we used shells but penne, fusilli, rotini, or macaroni would also work
  • ¼ cup olive oil
  • 1 clove minced garlic
  • 2 cups unsweetened full-fat non dairy milk such as oat milk use regular whole milk if you're not dairy-free
  • 4 oz shredded vegan white cheese use regular white cheese if you're not dairy-free (such as mozerella or white cheddar)
  • salt and pepper to taste
  • 3 tablespoon regular or gluten-free all purpose flour
  • 2 cups fresh spinach optional

How To Make Creamy Garlic Pasta

  • Begin by preparing your pasta noodles as instructed on the packaging. Once the noodles are tender, strain off the excess water and set them aside.
  • To make the creamy garlic sauce, add the olive oil and minced garlic to a large pot and bring to medium heat on the stovetop. Cook for 4-5 minutes, stirring, until the garlic is golden and fragrant.
  • Pour in the unsweetened milk, shredded cheese, and cook stirring for 10-15 minutes or until the cheese is completely melted. Slowly begin to whisk in the flour to avoid lumps. Season with salt and pepper to taste.
  • Remove the creamy garlic sauce from the heat and fold in your cooked and strained pasta. Option to fold in spinach for extra nutrients, flavor, and a pop of color. Serve warm.
