To begin, make your peanut sauce by mixing the peanut butter, ketchup, soy sauce, water, chili sauce, sriracha, and lime juice in a bowl or jar. Set aside.
Bring a large skillet with olive oil to medium heat. Add the diced onions and cook for 2 minutes, stirring, until softened and fragrant. Add the garlic and cook for 1 minute until fragrant. Add your ground chicken or turkey and cook completely.
Turn the heat off and add the peanut sauce to the skillet. Mix until all of the meat is coated well. Mix in your cashews.
Serve a scoop wrapped lettuce, topped with sesame seeds and green onions.
